The name Tkibuli was first mentioned in historical documents from the 13th century. There are signs of human habitation from ancient times (for example in the Magara Caves).
Dried persimmon (called “coroloky”)
Persimmons are the edible fruit of a number of species of trees. In color the ripe fruit of the cultivated strains range from light yellow-orange to dark red-orange depending on the species and variety. The ripe fruit has a high glucose content. Additionally, the fruits have been put to various medicinal and chemical uses. Like the tomato, persimmons are not popularly considered to be berries, but in terms of bothanical morphology the fruit is in fact a berry. Georgia has its own sort of persimmon (Caucasian) and adapted to Georgian conditions Japanese sort (originally from China). In Imereti region it is very popular to dry all persimmon fruits using the long strings (after that, they are also very decorative). During the process they are becoming covered by the white sugar sediment. Even dried, they remain quite moist and retain a pleasant chew. They are sweet, but not nearly as much as other dried fruit, such as papaya. They taste of sweet potato and perhaps gingerbread with a slight floral quality. Easily available on the local markets during the season (usually in autumn and winter).
Georgian fruit "tortilla" (called "tklapi")
Tklapi is a fruit leather made from the tkemali plum that is the favourite souring agent for soups and stews, or often from other fruits available on the market. For snacking, Georgians eat a sweet fruit tortilla made of apricots or peaches. An excellent though untraditional fruit leather may also be prepared from the juice used in making a walnut roll - churchkhela. Tklapi is a tasty chewy, dried fruit product. Fruit leathers are made by pouring pureéd fruit onto a flat surface for drying. When dried, the fruit is pulled from the surface and rolled. It gets the name "leather" from the fact that when pureéd fruit is dried, it is shiny and has the texture of leather.For the diabetic adult or child, fruit leathers made without sugar are a healthy choice for snacks or desserts. Individual fruit leathers should contain the amount of fruit allowed for the fruit exchange.
